Prep tips: 

• Choose your greens: make it healthier with spinach, arugula or kale. The greens stay vibrant, and the pesto keeps up to five days in the fridge 
• Make a big batch, use half, freeze half 
• For the Epic Life Challenge: 2 tbsps of pesto counts as your healthy fats. Serve with 1 cup cooked pasta, lean protein, and mixed veggies to perfectly balance your plate 
• Nuts are optional, this pesto is flavor packed without them or made with your choice of nuts or seeds 
• Pine nuts are classic, but try it with pumpkin seeds, sunflower seeds, cashews, almonds, walnuts, etc. to cut costs 
• Use pesto as a pasta sauce, dip, or as a spread in sandwiches and wraps 
• Use it as a sauce for grilled chicken, fish, and pork
